cookie butter mug cake

What's really ironic about these "recipe" posts is that I'm really a disgrace in the kitchen. I can't even make macaroni out of the box properly (shameful, I know). But lo and behold, this cookie butter mug cake is the one thing I haven't messed up yet. It's delightfully spongy—and honestly, how can you possibly resist scrumptious cookie butter? Inspired by Buzzfeed, this takes less than five minutes to make. It's a nice dessert after dinner that you can munch on while watching a movie, or a sweet treat that you can have for breakfast in the morning.

Ingredients you need:

2 tablespoons of Trader Joe's Speculoos Cookie Butter (I like crunchy)
4 tablespoons of flour
2 tablespoons of sugar
1/4 teaspoon of baking powder
1 egg
2 tablespoons of butter
1 teaspoon of vanilla extract

And of course, have your mug handy. Make sure that your mug is big (mine hold two cups), or else your mixture is going to overflow.

Put all of your ingredients into your mug and stir until you reach this smooth, ribbony, cake batter consistency. Stick the mug into the microwave and heat for 90 seconds. It's as simple as that!

Yes! It's marvelous! Take a bite when it's still warm and squishy. You won't regret it. Anyone and everyone will be hands down impressed once they try your cookie butter mug cake.

Even better? Add a scoop of vanilla ice cream to the top of your wonderful creation. It's literally heaven, I'm telling you. If you try this out, let me know what you think!

So far, summer vacation has been very relaxing. I'm still catching up on my Z's, but do not fret—I've got lots of ideas churning inside my brain that I can't wait to carry out during this break.
